Quick Dinner Idea

Do you ever have those super busy evenings where you just KNOW you should really throw together a crockpot meal, but your morning was too hectic and you forgot and now you're thinking of resorting to pizza?

Well, it happens to me, so I hope it happens to you, too! Otherwise, my supermom cape should really be confiscated. :-\

Honestly, Wednesdays used to be "Pizza Night", but we grew tired of having it every single week. So, I found this awesome quick dinner recipe for just those occasions. You can get the original here.

By the way, I renamed it Cowboy Trash (previously known as Trailer Trash Cornbread). This feeds our family of 5 with leftovers.

-2 boxes of Jiffy cornbread mix made as instructed on box
-2-6 hot dogs, cut length-wise and 1 in. pieces (depending on how many you like)
-2 cans chili with beans (if you have bean-less chili, add a can of drained red kidney beans; light or dark doesn't matter)

Preheat oven to 400 degrees (I do not know how to make that little degree sign). Grease a glass dish. I would use an 8x8 or at least a 2 qt. baking dish. Pour half the cornbread batter in the bottom of the dish. Mix hot dogs and chili (and drained beans if you added those separately). Pour over the top of the cornbread mix. Then, pour the remainder of the cornbread mix over the chili mix and spread it out so that it covers the chili. Pop it in the oven for about 15-20 mins or until the top is lightly browned.

Cool for about 5 mins and then spoon into bowls and enjoy. It is the perfect combo of sweet from the cornbread and savory from the chili dog mixture. So delicious!!
